  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup finely diced peeled apples (about 1 medium apple)
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Caramel sauce, for drizzling (optional)
  • Cinnamon sugar, for dusting (optional)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. In a small bowl, toss the diced apples with brown sugar, cinnamon, and nutmeg.
  6. Gently fold the spiced apples into the cookie dough.
  7. Cover the dough and refrigerate for at least 30 minutes.
  8. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  9. Roll the chilled dough into 1-inch balls and place them about 2 inches apart on the prepared baking sheets.
  10. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  11. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. If desired, drizzle with caramel sauce and dust with cinnamon sugar before serving.

Notes

  • For chewier cookies, slightly underbake them.
  • Store cookies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
