A quick and melty Caprese-style grilled cheese with avocado, tomato, and mozzarella, ready in 10 minutes.

Ingredients

  • 2 slices sourdough bread
  • 1 tablespoon butter, softened
  • 1/2 ripe avocado, sliced
  • 1/4 cup shredded mozzarella cheese
  • 2 slices tomato
  • Optional: fresh basil leaves
  • Optional: 1 teaspoon pesto

Instructions

  1. Spread butter on one side of each slice of bread.
  2. Place one slice of bread, butter-side down, in a non-stick skillet or on a griddle over medium heat.
  3. Layer the mozzarella cheese, tomato slices, and avocado slices on top of the bread in the skillet.
  4. If using, add basil leaves or spread pesto on the unbuttered side of the second slice of bread.
  5. Place the second slice of bread on top, butter-side up.
  6. Grill for 3-5 minutes per side, until the bread is golden brown and the cheese is melted and gooey.
  7. Slice in half and serve immediately.

Notes

  • For a crispier crust, ensure your skillet is preheated and maintain medium heat.
  • You can substitute sourdough bread with other sturdy breads like ciabatta or whole wheat.
  • Add a drizzle of balsamic glaze for extra flavor.
