Create a hearty, cheesy dinner that captures the flavor of a classic bacon cheeseburger without the high carbs. This simple baked casserole is perfect for a satisfying weeknight meal.

  • 1.5 lbs ground beef
  • 8 slices bacon, cooked and crumbled
  • 1 cup onion, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce (optional, check carb count if strictly Keto)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup dill pickle relish (optional, for topping)
  • 2 tablespoons ketchup or sugar-free ketchup (optional, for topping)
  • 1 tablespoon yellow mustard (optional, for topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and chopped onion in a large skillet over medium heat until the beef is fully browned and the onion is soft. Drain off any excess grease.
  3. Stir the crumbled bacon into the beef and onion mixture. Season with salt and pepper. Spread this mixture evenly into the prepared baking dish.
  4. In a medium bowl, whisk together the softened cream cheese, heavy cream, 3/4 cup of the cheddar cheese, Monterey Jack cheese, Dijon mustard, Worcestershire sauce (if using), and garlic powder until smooth.
  5. Pour the cheese sauce evenly over the ground beef and bacon layer in the baking dish.
  6. Sprinkle the remaining 1/4 cup of cheddar cheese over the top.
  7. Bake for 20 to 25 minutes, or until the casserole is bubbly and the cheese on top is melted and lightly golden brown.
  8. Let the casserole rest for 5 minutes before serving. Top individual servings with pickle relish, mustard, and ketchup, if desired.

Notes

  • For a Keto Dinner Ideas option, skip the optional ketchup and mustard toppings, as they contain sugar. Use a sugar-free ketchup substitute if you need that flavor.
  • If you prefer a Crockpot Bacon Cheeseburger Bake, combine the cooked beef/bacon mixture with the sauce ingredients, pour into a slow cooker, and cook on low for 3-4 hours or high for 1.5-2 hours. Top with cheese for the last 15 minutes.
