8 oz sirloin steak or ground beef, cut into thin strips or crumbled
1 tablespoon olive oil
8 oz cremini mushrooms, sliced
1/2 small yellow onion, finely chopped
1 clove garlic, minced
1/2 cup beef broth
1 teaspoon Worcestershire sauce
1/2 teaspoon Dijon mustard
1/4 cup sour cream
1 tablespoon all-purpose flour
Salt and black pepper to taste
4 oz egg noodles
Instructions
Cook the egg noodles according to package directions. Drain and set aside.
Season the beef strips or ground beef with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Brown the beef in batches if necessary to avoid crowding the pan. Remove the beef and set it aside.
Add the sliced mushrooms and chopped onion to the same skillet. Cook until the mushrooms release their liquid and start to brown, about 5 to 7 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the mushrooms and stir for 1 minute.
Slowly whisk in the beef broth, Worcestershire sauce, and Dijon mustard. Bring the mixture to a simmer, stirring until the sauce thickens slightly.
Return the cooked beef to the skillet. Reduce the heat to low.
In a small bowl, whisk the sour cream until smooth. Remove the skillet from the heat and stir in the sour cream until fully combined. Do not boil the sauce after adding the sour cream.
Taste and adjust seasoning with salt and pepper.
Serve the creamy beef and mushroom sauce over the warm egg noodles immediately.
