Ingredients
Scale
1 (8 ounce) package cream cheese, softened
1 (10 ounce) can Rotel diced tomatoes and green chilies, drained
1 (1 ounce) packet ranch seasoning mix
1 cup shredded cheddar cheese
1 cup frozen corn, thawed
Instructions
Place the softened cream cheese in a medium mixing bowl.
Add the drained Rotel, ranch seasoning mix, shredded cheddar cheese, and thawed corn to the bowl.
Use a spoon or electric mixer on low speed to combine all ingredients until they are fully mixed and creamy.
Transfer the dip mixture to a serving bowl.
Chill the dip in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
Serve your boat dip cold with tortilla chips, crackers, or fresh vegetables.
Notes
For a tangier flavor, use a full-fat cream cheese.
Drain the Rotel very well; excess liquid will make the dip runny.
You can substitute taco seasoning for ranch seasoning for a different flavor profile.
This dip is best served cold, making it an ideal summer dip recipe.
