1.5 lbs boneless, skinless chicken thighs
1/2 cup brown sugar
1/4 cup soy sauce
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon ginger, grated
1 teaspoon cornstarch
1/4 cup water
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, combine brown sugar, soy sauce, olive oil, minced garlic, and grated ginger. Mix well.
Add the chicken thighs to the bowl and toss to coat them evenly in the sauce. Let them marinate for at least 15 minutes.
In a small separate bowl, whisk together cornstarch and water to create a slurry.
Arrange the marinated chicken thighs in a single layer on a baking sheet.
Pour any remaining marinade over the chicken.
Bake for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened and caramelized.
While the chicken bakes, heat the cornstarch slurry in a small saucepan over medium heat, stirring constantly until it thickens.
Brush the thickened glaze over the chicken during the last 5 minutes of baking.
Serve the chicken hot, with rice or your favorite vegetables.
Notes
For a slow cooker version, place marinated chicken in the slow cooker. Cook on low for 4-6 hours or high for 2-3 hours. Thicken sauce separately with cornstarch slurry before serving.
Adjust brown sugar and soy sauce to your preference for sweetness and saltiness.
Garnish with chopped green onions or sesame seeds for extra flavor and visual appeal.
