A simple and flavorful baked chicken recipe with a sweet and savory brown sugar pineapple glaze, perfect for a weeknight dinner.

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup pineapple chunks, drained
  • 1/2 cup packed brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • Cooked rice, for serving
  • Optional garnishes: chopped green onions, sesame seeds

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the brown sugar, soy sauce, ketchup, apple cider vinegar, ginger, garlic, and black pepper until well combined.
  3. Place the chicken thighs in a 9×13 inch baking dish.
  4. Pour the brown sugar pineapple glaze evenly over the chicken.
  5. Arrange the pineapple chunks around the chicken.
  6. Bake for 30-35 minutes, or until the chicken is cooked through and the glaze is bubbly and slightly caramelized. Baste the chicken with the glaze halfway through baking.
  7. Serve the chicken and pineapple over cooked rice. Garnish with green onions and sesame seeds if desired.

Notes

  • For extra flavor, you can marinate the chicken in half of the glaze for 30 minutes before baking.
  • If you prefer a thicker glaze, you can simmer the leftover sauce from the baking dish on the stovetop for a few minutes until it reaches your desired consistency.
