2 cups cooked chicken breast, shredded or diced
1/2 cup Buffalo wing sauce
1/4 cup ranch dressing (plus more for drizzling)
4 large flour tortillas
1 cup shredded lettuce
1/2 cup shredded cheddar or Monterey Jack cheese
1/4 cup blue cheese crumbles (optional)
Cooking spray or oil for crisping
Instructions
If using pre-cooked chicken, heat a skillet over medium heat and add a light coating of cooking spray or oil. Add the chicken and cook briefly until slightly crispy, about 3-4 minutes.
In a bowl, combine the cooked chicken with the Buffalo wing sauce. Toss until the chicken is fully coated.
In a separate small bowl, mix the 1/4 cup of ranch dressing with 1 tablespoon of water to thin it slightly, if desired.
Lay out the four tortillas. Spread a thin layer of the thinned ranch mixture down the center of each tortilla.
Layer the Buffalo chicken mixture evenly over the ranch dressing on each tortilla.
Top the chicken with shredded lettuce, cheese, and blue cheese crumbles, if using.
Fold in the sides of the tortilla, then tightly roll the wrap from the bottom up.
Slice the wraps in half if desired and serve immediately with extra ranch dressing on the side.
Notes
For extra flavor, lightly toast the tortillas in a dry skillet before filling them.
You can substitute rotisserie chicken for quicker prep time.
Use your favorite store-bought crispy chicken tenders if you skip the pan-crisping step for the shredded chicken.
