A flavorful and easy marinade for tender, delicious carne asada, perfect for grilling.

  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, oregano, salt, black pepper, and cayenne pepper (if using).
  2. Place your chosen cut of steak (skirt steak or flank steak work well) in a resealable bag or shallow dish.
  3. Pour the marinade over the steak, ensuring it is fully coated.
  4. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
  5. Remove steak from marinade and grill to your desired doneness.

Notes

  • For a spicier marinade, add more cayenne pepper or a minced jalapeño.
  • This marinade is excellent for skirt steak, flank steak, or even chicken.
  • Allow the steak to come to room temperature for about 20 minutes before grilling for more even cooking.
