Make this cool and creamy fruit salad that works as both a refreshing side dish and a simple dessert. This no-bake recipe combines fresh berries and other fruit with a rich cream cheese filling, making it perfect for potlucks or summer gatherings.

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping, thawed
  • 1 pound strawberries, hulled and sliced
  • 2 cups green grapes, halved
  • 2 cups blueberries
  • 1 cup mandarin orange segments, drained
  • Optional: 1/4 cup caramel sauce for drizzling

Instructions

  1. In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Add the powdered sugar and vanilla extract to the cream cheese mixture. Beat until fully combined and creamy.
  3. Gently fold in the thawed whipped topping until no streaks remain. This creates your cheesecake filling.
  4. In a separate large bowl, combine the strawberries, grapes, blueberries, and mandarin oranges.
  5. Pour the cheesecake filling over the fruit mixture. Fold gently until the fruit is evenly coated with the creamy mixture. Do not overmix.
  6. Cover the bowl and chill the cheesecake fruit salad in the refrigerator for at least 1 hour before serving. This allows the flavors to blend.
  7. If using, drizzle with caramel sauce just before serving.

Notes

  • You can prepare the fruit and the cheesecake filling separately up to one day ahead. Combine them just before chilling.
  • For a tropical variation, substitute pineapple chunks and kiwi slices for some of the berries.
  • If you want a crunch, sprinkle a few crushed graham crackers over the top before serving.
