3 lbs Yukon Gold potatoes, peeled and thinly sliced
4 cloves garlic, minced
4 tablespoons unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg
2 cups shredded Gruyère cheese
1 cup shredded sharp cheddar cheese
1/2 cup grated Parmesan cheese
Instructions
Preheat your oven to 375°F (190°C). Butter a 9×13 inch baking dish.
In a large saucepan, melt the butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
Gradually whisk in the milk until smooth. Bring the mixture to a simmer, stirring frequently, until it thickens, about 5-7 minutes.
Remove from heat and stir in the salt, pepper, nutmeg, Gruyère, cheddar, and Parmesan cheeses until melted and smooth.
Arrange half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
Layer the remaining potatoes on top, followed by the rest of the cheese sauce, ensuring the potatoes are evenly coated.
Cover the dish tightly with aluminum foil.
Bake for 45 minutes. Remove the foil and bake for another 20-25 minutes, or until the potatoes are tender and the top is golden brown and bubbly.
Let the gratin rest for 10 minutes before serving.
Notes
For best results, slice potatoes uniformly thin, about 1/8 inch thick. A mandoline slicer is helpful.
You can prepare this dish up to a day in advance. Cover and refrigerate after assembling. Add an extra 10-15 minutes to the covered baking time if baking from chilled.
Feel free to add a pinch of cayenne pepper to the cheese sauce for a little heat.
