Make this easy, comforting cheesy chicken pasta for a satisfying weeknight dinner. This one-pot recipe delivers rich, gooey cheese sauce and tender chicken quickly.

  • 1 pound dry pasta (penne or rotini work well)
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the cut chicken pieces, salt, pepper, and Italian seasoning. Cook until the chicken is browned on all sides and mostly cooked through, about 5 to 7 minutes.
  2. Add the minced garlic to the pot and cook for 1 minute until fragrant.
  3. Pour in the chicken broth and bring the liquid to a boil. Add the dry pasta to the boiling broth.
  4. Reduce the heat to medium-low, cover the pot, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
  5. Stir in the heavy cream and butter until combined.
  6. Remove the pot from the heat. Stir in the cheddar cheese, mozzarella cheese, and Parmesan cheese until the sauce is smooth and creamy.
  7. Serve the ultimate cheesy chicken pasta immediately while hot.

Notes

  • For a baked version, transfer the finished pasta to a baking dish, top with extra cheese, and bake at 375°F (190°C) for 10 minutes until bubbly.
  • You can substitute chicken broth with water if necessary, but the flavor will be less rich.
  • Use pre-cooked, shredded chicken to cut the cooking time down even further for a quick chicken dinner.
