  • 2 lbs boneless, skinless chicken breasts
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) can mild red enchilada sauce
  • 1 cup salsa
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups cooked rice (or cauliflower rice for low carb)
  • Toppings: shredded cheese, sour cream, avocado, chopped cilantro, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a separate bowl, mix together the black beans, enchilada sauce, salsa, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper.
  3. Pour the sauce mixture over the chicken in the slow cooker.
  4. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and easily shredded.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the sauce and stir to coat.
  6. To assemble the bowls, divide the cooked rice among four bowls.
  7. Top the rice with a portion of the seasoned shredded chicken mixture.
  8. Add your preferred toppings like cheese, avocado, and cilantro. Serve immediately with lime wedges.

Notes

  • For low carb chicken burrito bowls, substitute the rice with cauliflower rice or extra lettuce.
  • This shredded chicken freezes well for future meal prep lunches. Cool completely before storing in freezer-safe containers.
  • If you prefer a Chipotle style chicken bowl, add 1 teaspoon of smoked paprika and a dash of chipotle powder to the seasoning mix.
