  • 1 pound rotini or farfalle pasta
  • 2 cups cooked, shredded chicken breast
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup croutons or garlic breadcrumbs (optional)
  • For the Dressing:
  • 1/2 cup mayonnaise
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice, fresh
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse briefly with cold water to cool it down. Set aside.
  2. Prepare the homemade Caesar dressing: In a medium bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, minced garlic, and Worcestershire sauce until smooth.
  3. Stir in the 1/4 cup of Parmesan cheese into the dressing. Season with salt and pepper.
  4. In a large bowl, combine the cooled pasta, shredded chicken, and chopped romaine lettuce.
