Ingredients

Scale
  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 4 ounces water chestnuts, drained and chopped
  • 4 ounces mushrooms (shiitake or white button), finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar (optional)
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped green onions, for garnish
  • 1 head butter lettuce or iceberg lettuce, leaves separated and washed

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground chicken to the skillet. Cook, breaking it up with a spoon, until it is browned and cooked through, about 5 to 7 minutes. Drain off any excess grease.
  3. Add the chopped water chestnuts and mushrooms to the skillet with the chicken. Cook for 3 minutes until the mushrooms soften slightly.
  4. Stir in the minced garlic and grated ginger. Cook for 1 minute until fragrant.
  5. In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, sesame oil, sugar (if using), and black pepper.
  6. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly. Cook for 1 to 2 minutes until the sauce thickens slightly.
  7. Remove the skillet from the heat. Stir in half of the chopped green onions.
  8. Arrange the washed lettuce leaves on a serving platter. Spoon the chicken mixture into the center of each lettuce cup.
  9. Garnish the wraps with the remaining green onions. Serve immediately.

Notes

  • For a crispier texture, you can briefly fry thin strips of rice noodles until puffed and use them as a topping.
  • If you prefer a spicier filling, add 1/2 teaspoon of chili garlic sauce to the sauce mixture.
  • Use chicken thighs instead of breasts for a richer flavor in the filling.
