  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 2 cups cooked white rice
  • 1 cup frozen corn kernels
  • 0.5 cup shredded Monterey Jack cheese
  • 0.25 cup mayonnaise
  • 2 tablespoons lime juice, fresh
  • 1 teaspoon Tajín seasoning (or more to taste)
  • 2 tablespoons chopped fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Season the chicken pieces with chili powder, cumin, and salt.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 6 to 8 minutes. Remove chicken from the skillet and set aside.
  3. In the same skillet, add the frozen corn. Cook, stirring occasionally, until the corn is heated through and slightly charred, about 4 minutes.
  4. Reduce the heat to low. Stir the mayonnaise, lime juice, and Tajín seasoning into the corn mixture until well combined to create the street corn sauce.
  5. Return the cooked chicken to the skillet and toss gently to coat with the sauce. Stir in the shredded cheese until it melts slightly.
  6. Divide the cooked rice among four bowls. Top the rice evenly with the street corn chicken mixture.
  7. Garnish each bowl with fresh cilantro and serve immediately with lime wedges on the side.

  • For meal prep, store the rice, chicken mixture, and cilantro topping separately. Assemble just before eating to keep the rice fluffy.
