Create a delicious, healthy weeknight dinner in under 20 minutes with this simple chicken zucchini stir fry recipe featuring tender chicken and crisp zucchini in a savory garlic soy sauce.

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 medium zucchinis, sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten free)
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1/4 teaspoon black pepper
  • Sesame seeds, for garnish

Instructions

  1. Combine the soy sauce and cornstarch (if using) in a small bowl to create the sauce base. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the hot skillet and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  4. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
  5. Add the sliced zucchini to the skillet. Stir fry for 3 to 4 minutes until the zucchini is tender-crisp.
  6. Return the cooked chicken to the skillet with the zucchini.
  7. Pour the prepared soy sauce mixture over the chicken and vegetables. Toss everything together quickly until the sauce thickens slightly and coats the ingredients evenly.
  8. Stir in the black pepper.
  9. Serve the chicken zucchini stir fry immediately, garnished with sesame seeds.

  • For a low carb chicken zucchini meal, skip serving with rice or noodles.
  • You can add other vegetables like sliced bell peppers or mushrooms when you add the zucchini.
