Ingredients

Scale
  • 1 pound flank steak, sliced thinly against the grain
  • 2 tablespoons soy sauce, divided
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup beef broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon sesame oil

Instructions

  1. In a medium bowl, toss the sliced flank steak with 1 tablespoon of soy sauce and the cornstarch. Set aside for 10 minutes. This step helps tenderize the beef.
  2. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, beef broth, oyster sauce, sugar, and sesame oil to create the sauce. Set aside.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat until shimmering. Add half of the beef mixture and stir-fry quickly until browned, about 1-2 minutes. Remove the beef and set it aside. Repeat with the remaining beef and oil.
  4. Add the remaining 1 tablespoon of oil to the skillet. Add the sliced bell peppers and onion. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.
  5. Add the minced garlic and ginger to the skillet. Cook for 30 seconds until fragrant.
  6. Return the cooked beef to the skillet. Pour the prepared sauce mixture over the beef and vegetables.
  7. Stir constantly and cook for 1-2 minutes until the sauce thickens and coats the beef and vegetables evenly, creating a glossy finish.
  8. Remove from heat immediately and serve hot over steamed rice or noodles.

Notes

  • For the best texture, slice the flank steak against the grain.
  • If you do not have flank steak, sirloin steak works well for this Chinese Beef Stir Fry.
  • To achieve a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water before adding it to the sauce mixture in step 4.
