Make-Ahead Overnight Sausage and Cheese Christmas Breakfast Casserole

Prepare this hearty, savory egg and sausage casserole the night before for a stress-free Christmas morning brunch that feeds your whole family.

  • 1 loaf (about 1 pound) sourdough bread, cut into 1-inch cubes
  • 1 pound breakfast sausage, cooked and drained
  • 1 cup chopped onion
  • 1 cup shredded Gruyère cheese
  • 1 cup shredded sharp cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Grease a 9×13 inch baking dish. Arrange the bread cubes evenly in the bottom of the prepared dish.
  2. Scatter the cooked sausage, chopped onion, Gruyère cheese, and cheddar cheese over the bread layer.
  3. In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, pepper, and nutmeg until fully combined.
  4. Pour the egg mixture slowly and evenly over the bread and cheese layers, pressing down gently to soak the bread.
  5. Cover the dish tightly with plastic wrap. Refrigerate for at least 8 hours, or preferably overnight.
  6. When ready to bake, preheat your oven to 350 degrees Fahrenheit. Remove the plastic wrap.
  7. Bake uncovered for 45 to 55 minutes, or until the casserole is puffed, golden brown, and a knife inserted near the center comes out clean.
  8. Let the casserole rest for 10 minutes before slicing and serving for your easy holiday brunch.

Notes

  • For a different flavor, substitute the sausage with cooked bacon or ham.
  • If you need to speed up the process, you can bake this casserole immediately after assembly, but the texture will be less custardy.
  • This recipe is excellent for feeding a crowd; easily double the ingredients for a larger gathering.
