Christmas Jam: Strawberry Cranberry Delight

A festive strawberry-cranberry jam spiced with cinnamon, perfect for canning and gifting during the holidays.

Ingredients

  • 4 cups fresh or frozen strawberries, hulled and chopped
  • 2 cups fresh or frozen cranberries
  • 4 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 box (1.75 oz) powdered fruit pectin

Instructions

  1. Prepare your water bath canner, jars, lids, and bands.
  2. In a large pot, combine strawberries, cranberries, lemon juice, cinnamon, cloves, and allspice.
  3. Stir in the powdered fruit pectin until dissolved.
  4. Bring the mixture to a rolling boil over high heat, stirring constantly.
  5. Add the granulated sugar and return to a full rolling boil, stirring constantly.
  6. Boil hard for 1 minute, stirring constantly.
  7. Remove from heat. Skim off any foam with a metal spoon.
  8. Ladle the hot jam into prepared half-pint jars, leaving 1/4 inch headspace.
  9. Wipe rims clean and place lids and bands on jars.
  10. Process in a water bath canner for 10 minutes (adjust for altitude if necessary).
  11. Remove jars from canner and let cool on a wire rack for 12-24 hours.
  12. Check seals and store properly.

Notes

  • For a smoother jam, you can pulse the fruit in a food processor before cooking.
  • Ensure your jars and lids are sterilized before filling.
  • Adjust spices to your preference.
  • This jam is delicious on toast, scones, or as a glaze for meats.
