6 cinnamon rolls (store-bought or homemade)
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
2 tablespoons brown sugar
2 tablespoons butter or cooking oil
Instructions
If using store-bought rolls, separate them and gently flatten each roll with a rolling pin to create a thin rectangle. If using homemade, roll them out thinly.
In a shallow dish, whisk together the eggs, milk, vanilla extract, and 1/2 teaspoon of cinnamon until combined.
In a separate small bowl, mix the brown sugar and the remaining 1/2 teaspoon of cinnamon.
Dip each flattened cinnamon roll piece into the egg mixture, coating both sides briefly. Do not let it soak too long.
Heat the butter or cooking oil in a large skillet over medium heat.
Place the dipped rolls onto the hot skillet. Cook for 2 to 3 minutes per side, until golden brown and heated through.
While cooking, sprinkle the cinnamon-sugar mixture lightly over the cooking rolls.
Remove the rolls from the skillet. If your cinnamon rolls came with icing, warm it slightly and drizzle it over the finished roll-ups before serving.
Notes
You can use brioche bread cubes instead of store-bought rolls for a French toast bake variation.
Serve these roll-ups with maple syrup for dipping if you skip the included icing.
For an extra indulgent breakfast, use half and half instead of milk in the custard mixture.
