This Cowboy Cornbread Casserole is a hearty, comforting one-dish meal perfect for busy weeknights. It layers seasoned ground beef, beans, and corn under a simple, fluffy cornbread topping for a satisfying family dinner.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) sweet corn, drained
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 ounces) cornbread mix (like Jiffy)
  • Ingredients required for cornbread mix (usually milk and eggs)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the rinsed black beans, drained corn, Rotel tomatoes, chili powder, cumin, salt, and pepper into the beef mixture. Cook for 5 minutes, stirring occasionally.
  4. Spread the beef mixture evenly into the prepared baking dish. Sprinkle the shredded cheddar cheese over the top of the meat layer.
  5. Prepare the cornbread mix according to the package directions, usually mixing the dry mix with milk and eggs.
  6. Pour the prepared cornbread batter evenly over the cheese and meat layer.
  7. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  8. Let the casserole cool for 5 minutes before you cut and serve it.

Notes

  • For extra flavor, add 1/2 teaspoon of garlic powder to the meat mixture.
  • If you prefer a slightly spicier casserole, use hot Rotel instead of regular.
  • You can substitute pinto beans for black beans if you prefer.
