Make rich, velvety creamed spinach at home that tastes like your favorite steakhouse side dish. This recipe is fast and uses simple ingredients for a luxurious result.

  • 1 tablespoon unsalted butter
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 1 teaspoon all-purpose flour
  • 1/4 cup chicken broth
  • 1/2 cup heavy cream
  • 2 ounces cream cheese, cut into pieces
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Dijon mustard
  • Pinch of ground nutmeg
  • 10 ounces fresh spinach, washed and dried, or frozen chopped spinach, thawed and squeezed dry
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the minced shallot and cook until softened, about 3 minutes.
  2. Add the minced garlic and cook for 30 seconds until fragrant. Do not let it brown.
  3. Whisk in the flour and cook for 1 minute, stirring constantly to create a roux.
  4. Slowly whisk in the chicken broth until smooth. Bring the mixture to a simmer.
  5. Reduce the heat to low. Stir in the heavy cream, cream cheese pieces, Parmesan cheese, Dijon mustard, and nutmeg. Stir until the cheeses are fully melted and the sauce is smooth.
  6. Add the spinach to the sauce. If using fresh spinach, add it in batches, stirring until it wilts down completely. If using frozen spinach, stir until heated through.
  7. Season the creamed spinach with salt and pepper to your taste.
  8. Serve immediately as a side dish for steak or other main courses.

Notes

  • For a truly steakhouse texture, use fresh spinach and wilt it down before adding the cream sauce. Squeeze out any excess water from the spinach before adding it to the pan.
  • If you want a lower-carb option, you can omit the flour and thicken the sauce by simmering the cream and cheese mixture slightly longer until it reduces to your desired consistency.
  • This dish pairs perfectly with grilled steak or roasted chicken for a satisfying dinner.
