  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package fresh or frozen potato gnocchi
  • 1 cup low-sodium chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 (1 ounce) packet dry ranch seasoning mix
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream (optional, for extra richness)
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the shredded chicken and cook for 2 to 3 minutes until heated through.
  2. Add the gnocchi and chicken broth to the skillet. Bring the mixture to a simmer, stirring occasionally, until the gnocchi begins to soften, about 5 to 7 minutes.
