Make this easy, creamy mushroom pasta with garlic and spinach. It is a satisfying vegetarian comfort dish ready in under 30 minutes, perfect for a weeknight dinner.

Ingredients

Scale
  • 1 pound pasta (linguine or spaghetti recommended)
  • 1 tablespoon olive oil
  • 1 pound cremini or button mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine or vegetable broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 cups fresh spinach
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  1. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and begin to brown, about 5 to 7 minutes.
  3. Add the minced garlic to the skillet and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Pour in the white wine or broth and let it simmer, scraping up any browned bits from the bottom of the pan, until the liquid is mostly reduced, about 2 minutes.
  5. Reduce the heat to medium-low. Stir in the heavy cream and bring the sauce to a gentle simmer. Cook for 3 minutes until the sauce thickens slightly.
  6. Stir in the Parmesan cheese until the sauce is smooth. Season with salt and pepper.
  7. Add the fresh spinach to the sauce and stir until it wilts, about 1 minute.
  8. Add the drained pasta to the skillet with the sauce. Toss everything together. If the sauce seems too thick, add the reserved pasta water, a splash at a time, until you reach your desired consistency.
  9. Serve immediately with extra Parmesan cheese on top.

Notes

  • For a richer flavor, substitute Gruyere cheese for some of the Parmesan.
  • Add red pepper flakes with the garlic for a touch of heat.
  • If you want to add protein, grilled chicken breast pairs well with this dish.
