  • 1/2 small onion, finely diced
  • 1 teaspoon garlic powder
  • 1 cup long grain white rice, uncooked
  • 1 3/4 cups chicken broth
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 cup sharp cheddar cheese, freshly grated
  • 1/2 cup Parmesan cheese, freshly grated

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the diced onion and cook until soft, about 3 minutes.
  2. Stir in the garlic powder and uncooked rice. Cook for 1 minute, stirring constantly until the rice grains are lightly coated.
  3. Pour in the chicken broth and milk. Add the salt, pepper, and paprika. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15 minutes without lifting the lid.
  5. Remove the saucepan from the heat and let it stand, covered, for 5 minutes. Do not remove the lid during this resting period.
  6. Remove the lid. Stir in the grated cheddar cheese and Parmesan cheese until the cheese is fully melted and the rice is creamy.
  7. Serve the cheesy rice immediately as a perfect side dish for chicken or steak.
