Make this hearty Crockpot Cowboy Soup for a simple, filling dinner. This slow cooker recipe uses ground beef, beans, and vegetables, requiring minimal prep time for a comforting meal.

  • 1.5 lb ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 4 cups beef broth
  • 1 packet (1 ounce) taco seasoning mix
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1 cup shredded cheddar cheese for topping
  • Optional: Sour cream for topping

Instructions

  1. Place the raw ground beef into your slow cooker.
  2. Add the chopped onion, minced garlic, rinsed beans, drained corn, diced tomatoes, Rotel, and beef broth to the slow cooker over the beef.
  3. Sprinkle the taco seasoning, chili powder, cumin, salt, and pepper over the ingredients.
  4. Stir everything together gently until combined.
  5. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  6. Before serving, stir the soup well. If you want a creamy variation, stir in 1/2 cup of cream cheese or 1/2 cup of heavy cream during the last 30 minutes of cooking.
  7. Serve hot, topped with shredded cheddar cheese and a dollop of sour cream, if desired.

Notes

  • For best flavor, brown the ground beef in a skillet before adding it to the slow cooker. Drain off any excess grease before adding it.
  • This soup tastes even better the next day, making it excellent for meal prepping.
  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water and stir this slurry into the soup during the last 30 minutes of cooking.
