A quick and cheesy Tex-Mex casserole with seasoned ground beef, Rotel tomatoes, and a crunchy Dorito topping, perfect for busy weeknights or game day.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 bag (9 ounces) Doritos, crushed

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef with the chopped onion over medium-high heat. Drain off any excess grease.
  3. Stir in the Rotel diced tomatoes and green chilies (undrained) and the cream of chicken soup. Bring the mixture to a simmer.
  4. Remove the skillet from the heat. Stir in the shredded cheddar cheese until melted.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Top evenly with the crushed Doritos.
  7. Bake for 20-25 minutes, or until the casserole is bubbly and the topping is golden.

Notes

  • For a chicken version, use 2 cups of cooked, shredded chicken instead of ground beef.
  • You can assemble this casserole ahead of time and refrigerate it. Add a few extra minutes to the baking time if baking from cold.
  • Experiment with different flavors of Doritos for varied tastes.
