200 grams dark chocolate (at least 70% cocoa solids)
1 cup heavy whipping cream, cold
2 tablespoons granulated sugar
Instructions
Chop the dark chocolate into small, uniform pieces. Place the chopped chocolate in a heatproof bowl.
Pour half (1/2 cup) of the cold heavy whipping cream into a small saucepan. Heat the cream over medium-low heat until it just begins to simmer around the edges. Do not let it boil.
Pour the hot cream over the chopped chocolate. Let it sit undisturbed for five minutes to allow the chocolate to melt completely.
Whisk the chocolate and cream mixture gently until it becomes smooth and glossy. Set this mixture aside to cool to room temperature. It must not be warm when you fold in the remaining cream.
In a separate, chilled bowl, pour the remaining 1/2 cup of cold heavy whipping cream and the sugar. Beat with an electric mixer on medium-high speed until stiff peaks form. This creates your light, airy base.
Gently fold about one-third of the whipped cream into the cooled chocolate mixture using a rubber spatula. Fold until just combined to lighten the chocolate base.
Carefully fold the remaining whipped cream into the chocolate mixture in two additions. Use a light hand to incorporate the air without deflating the mixture. Stop folding as soon as no white streaks remain for a silky smooth texture.
Spoon the mousse into individual serving dishes, ramekins, or small chocolate mousse cups.
Chill the mousse in the refrigerator for at least four hours, or until firm. Serve cold.
Notes
For an elegant presentation, top the chilled mousse with fresh raspberries or a light dusting of cocoa powder before serving.
If you want a richer flavor, use chocolate with 75% cocoa content or higher.
This recipe works well as a make-ahead dessert; prepare it one day in advance.
