Make these simple, oven-baked apple fritters for a quick treat. They feature tender apples and cinnamon spice, topped with a sweet glaze. This recipe avoids frying for an easier preparation.

  • 2 large apples, peeled, cored, and diced
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted butter, cooled slightly
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons milk or apple cider
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a standard muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. A few lumps are fine.
  5. Fold in the diced apples until they are evenly distributed throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  8. While the fritters cool slightly, prepare the glaze. Whisk together the powdered sugar, 2 tablespoons of milk or cider, and vanilla extract until smooth. Add more liquid, one teaspoon at a time, if the glaze is too thick.
  9. Remove the warm fritters from the tin. Drizzle the cinnamon glaze generously over the tops of the warm fritters. Let the glaze set before serving.

Notes

  • For a crispier exterior, you can lightly spray the tops of the batter with cooking spray before baking.
  • If you prefer a tangier glaze, substitute the milk in the glaze with apple cider.
  • You can use any firm, tart apple variety, such as Honeycrisp or Granny Smith.
