Create a fresh, flavorful Italian-inspired dinner with this easy baked Caprese chicken recipe. This dish features tender chicken breasts topped with mozzarella, tomatoes, and basil, perfect for a quick, healthy weeknight meal.

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced
  • 1/2 cup fresh basil leaves, roughly chopped
  • 2 tablespoons balsamic glaze (for drizzling)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish or line it with parchment paper.
  2. Place the chicken breasts in the prepared baking dish. Drizzle the chicken with olive oil and sprinkle evenly with Italian seasoning, salt, and pepper.
  3. Bake the chicken for 15 minutes.
  4. Remove the dish from the oven. Top each chicken breast with slices of fresh mozzarella cheese and the halved tomatoes.
  5. Return the dish to the oven and bake for another 8 to 12 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and slightly bubbly.
  6. Remove from the oven. Scatter the fresh basil over the top of the chicken.
  7. Drizzle the entire dish with balsamic glaze before serving.

Notes

  • You can substitute fresh mozzarella with shredded low-moisture mozzarella if you prefer a more uniform melt.
  • For extra flavor, sear the chicken in an oven-safe skillet on the stovetop for 2-3 minutes per side before placing it in the oven.
  • This dish pairs well with roasted asparagus or a simple side salad for a complete low-carb chicken dinner.
