  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup lager beer (or preferred pale beer)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces smoked Gouda cheese, shredded
  • 4 ounces cream cheese, cubed
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Pinch of salt and black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly pour in the beer while whisking continuously until the mixture is smooth. Bring the mixture to a gentle simmer, stirring until it thickens slightly, about 3 minutes.
  4. Reduce the heat to low. Add the Worcestershire sauce, garlic powder, and smoked paprika. Stir to combine.
  5. Add the shredded cheddar and Gouda cheese to the saucepan in handfuls, stirring until each addition is completely melted and smooth before adding more. Do not let the mixture boil.
  6. Add the cubed cream cheese and stir until it is fully incorporated and the dip is creamy.
  7. Season with salt and pepper to taste.
  8. Serve immediately with soft pretzels, tortilla chips, or vegetable sticks.

Notes

  • For the best texture, shred your own cheese instead of using pre-shredded varieties, which contain anti-caking agents.
  • If the dip becomes too thick while serving, whisk in a splash more beer or milk to reach your desired consistency.
  • You can add 2 slices of cooked, crumbled bacon during the final step for extra flavor.
