Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, baking soda, cinnamon, and salt. Mix these dry ingredients well.
In a separate medium bowl, whisk together the mashed banana, peanut butter, maple syrup, egg, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Stir everything together until just combined. Do not overmix.
Fold in your chosen mix-ins.
Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently flatten the tops slightly with the back of a spoon.
