Make this creamy, cheesy broccoli rice casserole for a satisfying and simple side dish or weeknight meal. It uses common ingredients and comes together quickly.

  • 2 cups cooked white rice
  • 1 (10 ounce) package frozen chopped broccoli, thawed and drained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1/4 cup chopped onion
  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crushed butter crackers (optional topping)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, combine the cooked rice, drained broccoli, cream of chicken soup, cheddar cheese, milk, chopped onion, salt, and pepper. Mix until all ingredients are evenly coated.
  3. Transfer the mixture to the prepared baking dish.
  4. If using, sprinkle the melted butter over the top, followed by the crushed butter crackers.
  5. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the topping is golden brown.
  6. Let the casserole rest for 5 minutes before serving.

Notes

  • For a stovetop version, combine all ingredients except the cracker topping in a large saucepan over medium heat. Stir constantly until the cheese is melted and the mixture is hot. Serve immediately.
  • You can substitute cream of mushroom soup for cream of chicken soup if you prefer a vegetarian option.
  • Use leftover cooked rice to speed up preparation time.
