  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (8 ounces) refrigerated biscuit dough

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×9 inch baking dish or a similar-sized oven-safe skillet.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the frozen peas and corn. Cook for 2 minutes until heated through.
  4. Pour in the chicken broth, cream of chicken soup, and milk. Stir until the mixture is smooth and combined.
  5. Add the dried thyme, salt, and pepper. Bring the mixture to a gentle simmer, stirring often.
  6. Remove the skillet from the heat. Stir in the shredded cooked chicken until it is evenly coated in the sauce. Pour the chicken mixture into your prepared baking dish if you did not use an oven-safe skillet.
  7. Separate the refrigerated biscuit dough and arrange the biscuits on top of the chicken mixture. They should touch slightly.
  8. Bake for 15 to 20 minutes, or until the filling is bubbly and the biscuit topping is golden brown and cooked through.
  9. Let the casserole cool for 5 minutes before serving.
