1 pound Velveeta cheese, cut into cubes
1 (10 ounce) can Rotel Original Diced Tomatoes and Green Chilies, undrained
1 pound ground beef or sausage, cooked and drained
If using ground meat, cook the ground beef or sausage in a large skillet over medium heat until fully browned. Drain off all excess grease.
Stovetop Method: Combine the cooked meat, Velveeta cubes, undrained Rotel, and taco seasoning in a medium saucepan.
Cook over low heat, stirring frequently, until the Velveeta is completely melted and the dip is smooth and creamy. This usually takes about 10 to 15 minutes.
Slow Cooker Method: Place the cooked meat, Velveeta cubes, undrained Rotel, and taco seasoning directly into a small slow cooker.
Stir briefly to combine. Cook on LOW for 1 to 2 hours or on HIGH for 1 hour, stirring occasionally until smooth.
Serve the dip warm with tortilla chips, crackers, or vegetable sticks.
Notes
For a creamier texture, you can substitute half of the Velveeta with 8 ounces of softened cream cheese.
If you prefer a less spicy dip, use the mild Rotel variety.
If the dip thickens too much while keeping warm in the slow cooker, stir in a tablespoon of milk or water to restore creaminess.
