Make this classic comfort food tonight. You get tender ground beef patties smothered in a rich, savory mushroom gravy. This recipe is simple to prepare and perfect for a hearty weeknight dinner.

  • 1.5 lbs ground beef (80/20 recommended)
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon olive oil or butter for searing
  • 1 tablespoon butter for gravy
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 8 ounces sliced mushrooms
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon garlic powder

Instructions

  1. In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, egg, salt, pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
  2. Divide the mixture into 4 equal portions and form them into oval-shaped patties, about 3/4 inch thick.
  3. Heat the olive oil or butter in a large skillet over medium heat. Sear the patties for 3 to 4 minutes per side until nicely browned. Remove the patties from the skillet and set them aside on a plate.
  4. Reduce the heat to medium-low. Add the 1 tablespoon of butter to the same skillet. Once melted, add the sliced mushrooms and cook until they soften and release their liquid, about 5 minutes.
  5. Sprinkle the flour over the mushrooms and stir constantly for 1 minute to cook out the raw flour taste. This creates your roux base.
  6. Slowly whisk in the beef broth, scraping up any browned bits from the bottom of the pan. Add the dried thyme and garlic powder. Bring the gravy to a simmer, stirring until it thickens slightly.
  7. Return the browned beef patties to the skillet. Spoon some gravy over the patties. Cover the skillet and let them simmer gently in the gravy for 8 to 10 minutes, or until the patties are cooked through.
  8. Serve your juicy beef patties immediately, smothered in the rich mushroom gravy. This is a great budget friendly beef meal served over mashed potatoes.

Notes

  • For an even richer flavor, substitute half of the beef broth with dry red wine when making the gravy.
  • If you prefer an onion gravy instead of mushroom, sauté 1/2 cup of thinly sliced onions in the skillet until deeply caramelized before adding the flour for the gravy.
  • You can prepare the patties ahead of time and store them covered in the refrigerator for up to 24 hours before cooking.
