- 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 packet (1 ounce) dry onion soup mix
- 1/2 cup shredded Gruyere cheese
- 1/4 cup shredded Parmesan cheese
- 2 tablespoons chopped fresh parsley, for garnish
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potato cubes with olive oil until evenly coated.
- Add the dry onion soup mix to the bowl and toss again to ensure the potatoes are well-seasoned.
- Spread the seasoned potatoes in a single layer on a large baking sheet.
- Roast for 30-35 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
- Remove the baking sheet from the oven. Sprinkle the Gruyere and Parmesan cheeses evenly over the potatoes.
- Return the baking sheet to the oven for another 3-5 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, you can caramelize 1 large onion before adding it to the potatoes.
- A 13×9 inch baking dish can also be used if you don’t have a large baking sheet.
- These potatoes are a great holiday side dish.
