French Onion Potatoes

Easy roasted potatoes with classic French onion soup flavors and melted cheese, perfect for any meal.

  • 2 pounds Yukon Gold potatoes, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 packet (1 ounce) dry onion soup mix
  • 1/2 cup shredded Gruyere cheese
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil until evenly coated.
  3. Add the dry onion soup mix to the bowl and toss again to ensure the potatoes are well-seasoned.
  4. Spread the seasoned potatoes in a single layer on a large baking sheet.
  5. Roast for 30-35 minutes, or until the potatoes are tender and golden brown, flipping them halfway through.
  6. Remove the baking sheet from the oven. Sprinkle the Gruyere and Parmesan cheeses evenly over the potatoes.
  7. Return the baking sheet to the oven for another 3-5 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh parsley before serving.

Notes

  • For extra flavor, you can caramelize 1 large onion before adding it to the potatoes.
  • A 13×9 inch baking dish can also be used if you don’t have a large baking sheet.
  • These potatoes are a great holiday side dish.
