Instructions
Preheat your oven to 350°F (175°C).
Press the sugar cookie dough evenly into the bottom of a 12-inch pizza pan or a 9×13 inch baking dish to form a crust.
Bake for 12-15 minutes, or until the edges are golden brown and the center is set. Let the crust cool completely on a wire rack.
In a medium bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
Arrange the assorted fresh fruit over the frosting to create your desired design.
Slice and serve immediately, or chill until ready to serve.
Notes
For mini fruit pizzas, press cookie dough into mini muffin tins and bake for 8-10 minutes. Use a round cookie cutter to cut out circles from baked cookie sheets for individual servings.
You can use a piping bag with a star tip to create decorative borders with the cream cheese frosting before adding the fruit.
Ensure your fruit is dry before placing it on the pizza to prevent the frosting from becoming watery.
