Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • For the Cinnamon Swirl:
  • 1/2 cup packed light brown sugar
  • 2 teaspoons ground cinnamon
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • For the Vanilla Glaze (Optional):
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Prepare the cinnamon swirl mixture: In a small bowl, combine the brown sugar and 2 teaspoons of cinnamon. Set aside.
  3. Prepare the streusel topping: In a separate bowl, whisk together the flour, brown sugar, granulated sugar, and 1/4 teaspoon of cinnamon for the topping. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Chill this mixture.
  4. Make the cookie dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. In a medium bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined. Do not overmix.
  6. Form the cookies: Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each mound.
  7. Create the swirl: Gently press your thumb into the center of each dough mound to create a small well. Spoon about 1/2 teaspoon of the cinnamon swirl mixture into the well. Use a knife or toothpick to gently swirl the cinnamon mixture into the dough.
  8. Top the cookies: Sprinkle a generous amount of the chilled streusel topping over each swirled cookie.
  9. Bake for 10 to 12 minutes, or until the edges are lightly golden. The centers should still look soft.
  10. Cool the cookies on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  11. If using the glaze: Whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cookies.

Notes

  • For the softest texture, avoid overbaking; these cookies should remain slightly underdone in the center when removed from the oven.
  • You can prepare the streusel topping ahead of time and keep it refrigerated for up to three days.
  • These bakery style cookies pair perfectly with your morning coffee or tea.
