1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
1/4 cup honey
1/4 cup soy sauce
2 Tbsp rice vinegar
1 Tbsp minced fresh garlic
1 tsp grated fresh ginger
1/2 tsp sesame oil
1/4 tsp black pepper
Vegetables for skewers (optional): 1 red bell pepper, 1 onion, cut into chunks
Wooden or metal skewers (soak wooden skewers in water for 30 minutes if grilling)
Instructions
In a bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, sesame oil, and black pepper to create the marinade. This is your best marinade for chicken skewers.
Place the cubed chicken into a resealable bag or shallow dish. Pour half of the marinade over the chicken, reserving the other half for basting and serving.
Marinate the chicken in the refrigerator for at least 30 minutes, or up to 4 hours, to ensure juicy chicken skewers.
If using vegetables, thread the marinated chicken pieces onto the soaked wooden or metal skewers, alternating with bell pepper and onion chunks if desired.
Preheat your grill to medium-high heat (about 400°F) or preheat your oven to 400°F (200°C).
For Grilling: Place the skewers on the oiled grill grates. Grill for 10-12 minutes, turning every 3-4 minutes, basting with the reserved marinade during the last few minutes of cooking.
For Oven Baking: Arrange the skewers on a baking sheet lined with parchment paper. Bake for 18-22 minutes, flipping halfway through. Baste with the reserved marinade during the last 5 minutes.
Cook until the internal temperature of the chicken reaches 165°F and the outside is lightly caramelized.
Remove the skewers from the heat. Brush with any remaining reserved marinade before serving.
Notes
For extra flavor on the grill, use thicker cuts of chicken thigh instead of breast.
If you prefer a thicker sauce, simmer the reserved marinade in a small saucepan over medium heat for 3-5 minutes until it reduces slightly, then use it as a finishing glaze.
