  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup hot chocolate mix (standard packet type)
  • 1/2 cup boiling water
  • 1 cup mini marshmallows
  • 1 cup marshmallow fluff or marshmallow creme
  • 1/2 cup semi-sweet chocolate chips (optional, for extra decadence)

Instructions

  1. Preheat your oven to the temperature specified on the brownie mix box. Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Prepare the brownie batter according to the box directions, substituting the required water with the mixture of cocoa powder and boiling water. Whisk the cocoa powder into the boiling water until smooth, then add this mixture to the wet ingredients called for on the box. Mix until just combined.
  3. Stir in the hot chocolate mix and chocolate chips, if using, until they are evenly distributed throughout the batter.
  4. Pour half of the brownie batter into the prepared pan.
  5. In a small bowl, gently fold the marshmallow fluff until it is slightly loosened. Dollop spoonfuls of the marshmallow fluff over the batter in the pan. Use a knife or skewer to gently swirl the fluff into the batter, creating ribbons of marshmallow throughout.
  6. Pour the remaining brownie batter over the marshmallow layer. Smooth the top gently.
  7. Bake for the time recommended on the box for fudgy brownies, or until a toothpick inserted near the center comes out with moist crumbs attached.
  8. Remove the pan from the oven. Immediately sprinkle the mini marshmallows evenly over the hot brownie surface.
  9. Return the pan to the oven for 1 to 2 minutes, watching closely, until the marshmallows are puffed and lightly toasted.
  10. Let the brownies cool completely in the pan on a wire rack before lifting out using the parchment overhang and cutting into squares.

Notes

  • For the fudgiest texture, do not overbake your brownies. A few moist crumbs on the toothpick indicate they are done.
