- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/4 cup hot honey
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1/2 teaspoon ginger powder
- Salt and black pepper to taste
- 4 cups cooked quinoa or brown rice
- 2 cups broccoli florets
- 1 cup shredded carrots
- 1/2 cup chopped red bell pepper
- Optional toppings: sesame seeds, sliced green onions, sriracha
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken pieces with 1 tablespoon olive oil, garlic powder, ginger powder, salt, and pepper.
- Spread chicken on a baking sheet and roast for 15-20 minutes, or until cooked through.
- While chicken is roasting, steam or blanch broccoli florets until tender-crisp.
- In a small saucepan, combine hot honey, soy sauce, and apple cider vinegar. Heat over medium heat until warmed through and slightly thickened.
- In a large bowl, combine cooked quinoa, steamed broccoli, shredded carrots, and chopped red bell pepper.
- Add the roasted chicken to the bowl.
- Drizzle the hot honey glaze over the chicken and vegetables. Toss gently to combine.
- Serve immediately, or portion into containers for meal prep. Add optional toppings as desired.
