1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt

1/4 cup honey
1 tablespoon hot sauce (adjust to your spice preference)
4 ounces feta cheese, crumbled
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish or line it with parchment paper.
Pat the chicken breasts dry with paper towels. This step helps achieve a better sear and crispness.
In a small bowl, mix the smoked paprika, garlic powder, salt, and pepper. Rub this spice blend evenly over both sides of the chicken breasts.
Heat the olive oil in a large, oven-safe skillet over medium-high heat. Sear the chicken breasts for 3 minutes per side until golden brown. You are not cooking them through, just developing color.
While the chicken sears, whisk together the honey and hot sauce in a small bowl to create the hot honey glaze.
Remove the skillet from the heat. Brush half of the hot honey glaze over the tops of the seared chicken.
Transfer the skillet to the preheated oven. Bake for 12 to 15 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit (74 degrees Celsius).
Remove the chicken from the oven. Brush the remaining hot honey glaze over the chicken.
Sprinkle the crumbled feta cheese evenly over the tops of the chicken breasts. Return the skillet to the oven for 2 to 3 minutes, just until the feta softens slightly.
Remove from the oven. Let the chicken rest for 5 minutes before serving. Garnish with fresh chopped parsley.

For extra crispness, you can lightly dredge the seasoned chicken in a thin coating of flour before searing.
If you prefer a less spicy dish, use regular honey and add a pinch of red pepper flakes to the spice rub instead of hot sauce in the glaze.
