1 pound kielbasa sausage, sliced
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
12 ounces penne pasta
1 cup heavy cream
1 cup shredded cheddar cheese
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add sliced kielbasa and cook until browned, about 5 minutes. Remove sausage and set aside.
Add chopped onion to the pot and cook until softened, about 4 minutes. Add minced garlic and cook for 1 minute more until fragrant.
Pour in diced tomatoes (with juice), chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Add the penne pasta to the boiling liquid. Stir well to prevent sticking. Reduce heat to medium-low, cover, and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Stir in the heavy cream and the cooked kielbasa. Heat through for 2 minutes.
Remove the pot from the heat. Stir in the shredded cheddar cheese until the sauce is smooth and creamy.
Serve immediately.
Notes
For a heartier meal, add 1 cup of frozen peas during the last 5 minutes of simmering.
Use smoked sausage if kielbasa is unavailable.
