A simple, cheesy, and high-protein chicken casserole perfect for weeknight dinners. This low-carb and gluten-free recipe is family-friendly and easy to prepare.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup broccoli florets, steamed
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/4 cup chopped cooked bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, steamed broccoli florets, cream cheese, sour cream, cheddar cheese, mayonnaise, garlic powder, onion powder, salt, and pepper.
  3. If using, stir in the chopped bacon.
  4. Mix all ingredients until well combined.
  5. Pour the mixture into a greased 8×8 inch baking dish.
  6. Bake for 20-25 minutes, or until the casserole is heated through and bubbly.
  7. Let it rest for a few minutes before serving.

Notes

  • For a different flavor, you can swap cheddar cheese for Monterey Jack or a Mexican blend.
  • Add other low-carb vegetables like cauliflower or spinach.
  • This casserole can be assembled ahead of time and refrigerated before baking. Add a few extra minutes to the baking time if baking from cold.
  • Reheat leftovers in the oven or microwave.
