Make this easy meatloaf casserole for a hearty, comforting family dinner. This one-dish recipe layers seasoned ground beef with a creamy mashed potato topping and melted cheese, simplifying your weeknight cooking.

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 1 large egg
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1/4 cup ketchup (for meatloaf mix)
  • 1 tablespoon Worcestershire sauce (for meatloaf mix)
  • 2 lbs Russet potatoes, peeled and quartered
  • 1/2 cup milk (for potatoes)
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese (for topping)
  • 1/4 cup sour cream (optional, for topping)
  • 2 tablespoons chopped green onions (for garnish)
  • 1/2 cup ketchup or BBQ sauce (for glaze)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, egg, 1/2 cup milk, chopped onion, salt, pepper, parsley, 1/4 cup ketchup, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
  3. Press the meat mixture evenly into the bottom of the prepared baking dish to form the meatloaf base.
  4. Bake the meatloaf base for 20 minutes.
  5. While the meatloaf bakes, prepare the mashed potatoes. Boil the potatoes until tender. Drain well.
  6. Mash the potatoes with the butter, 1/2 cup milk, and sour cream (if using) until smooth. Season with salt and pepper to taste.
  7. After the 20 minutes of baking, remove the dish from the oven. Spread the mashed potatoes evenly over the meatloaf layer.
  8. Brush the top of the potatoes with the 1/2 cup of ketchup or BBQ sauce for the glaze.
  9. Return the casserole to the oven and bake for another 20 minutes.
  10. Remove the casserole and sprinkle the shredded cheddar cheese over the top. Bake for 5 to 10 minutes more, or until the cheese is melted and bubbly.
  11. Let the meatloaf casserole rest for 10 minutes before slicing. Garnish with chopped green onions before serving.

Notes

  • You can prepare the mashed potatoes ahead of time and store them in the refrigerator. Reheat them slightly before spreading them over the meatloaf layer.
  • For a make ahead meatloaf casserole, assemble the entire dish (without the final cheese topping) and cover it tightly. Refrigerate for up to 24 hours. Add 10-15 minutes to the initial baking time if baking directly from the refrigerator.
  • Use leftover mashed potatoes if you have them to save time on boiling and mashing.
