A bright, fluffy, and herb-infused rice side dish with a zesty lemon flavor, perfect for pairing with grilled meats, seafood, or vegetable mains.

Ingredients

  • 1 tablespoon olive oil
  • 1 cup medium-grain rice (like Arborio or Jasmine)
  • 1 ¾ cups low-sodium chicken or vegetable broth
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add rice and toast for 1-2 minutes until lightly golden and fragrant.
  3. Pour in the broth, add lemon zest, and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.
  5. Remove from heat and let stand, covered, for 5 minutes.
  6. Fluff the rice with a fork. Stir in fresh lemon juice, chopped parsley, and dill.
  7. Season with salt and pepper to your preference.
  8. Serve immediately.

  • Feel free to substitute other fresh herbs like mint or chives.
