Make this easy copycat Mexican Pizza that tastes better than the fast-food version. You get crispy tortillas layered with seasoned ground beef, refried beans, and melted cheese for a quick Tex-Mex dinner.

Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly brush both sides of the flour tortillas with vegetable oil.
Bake the tortillas directly on the oven rack for 5 to 7 minutes, flipping halfway through, until they are crisp. Set aside.
While tortillas crisp, cook the ground beef in a skillet over medium heat until browned. Drain any excess fat.
Stir the taco seasoning mix and water into the cooked ground beef. Simmer for 5 minutes until the liquid reduces. This is your seasoned beef.
To assemble the first layer, place one crispy tortilla on a baking sheet lined with parchment paper. Spread half of the warmed refried beans evenly over the tortilla.
Spoon half of the seasoned ground beef over the beans. Sprinkle with half of the shredded cheese.
Place the second crispy tortilla on top of the cheese layer. Repeat the layering process: spread the remaining refried beans, top with the remaining seasoned beef, and sprinkle with the remaining cheese.
Pour the enchilada sauce evenly over the top layer of cheese.
