  • 4 tablespoons unsweetened cocoa powder
  • 1/2 cup creamy peanut butter

  • 3 cups quick-cooking oats

Instructions

  1. Combine the sugar, milk, and cocoa powder in a medium saucepan.
  2. Bring the mixture to a full rolling boil over medium heat, stirring constantly. Boil hard for exactly one minute without stirring once it boils.
  3. Remove the saucepan from the heat immediately. Stir in the peanut butter and vanilla extract until fully melted and combined.
  4. Quickly stir in the quick-cooking oats until they are evenly coated with the chocolate mixture.
  5. Drop rounded tablespoons of the mixture onto wax paper or parchment paper laid on a baking sheet.
  6. Let the cookies cool and set completely at room temperature, about 30 minutes, before serving.
